Savor the distinct taste of roasted peppers and beer in this flavorful salsa.
Ingredients:
  • 0.5 green bell pepper
  • 0.5 red bell pepper
  • 2 fresh jalapeno peppers
  • 2 serrano peppers
  • 2 tablespoons olive oil
  • 0.75 large white onion, cut into large chunks
  • 0.5 large fresh tomato, chopped
  • 3 cloves garlic
  • 0.25 cup cilantro leaves
  • 1 (12 ounce) can canned diced tomatoes with their juice
  • 2 tablespoons fresh lime juice
  • 0.5 teaspoon ground black pepper
  • 3 fluid ounces Mexican beer
Instructions:
  • Preheat the oven on the broil setting and prepare a baking sheet by lining it with foil.
  • Cut the green bell pepper, red bell pepper, jalapeno peppers, and serrano peppers in half lengthwise, removing stems and seeds. Brush the peppers with olive oil and broil until skin blackens and blisters, 3 to 5 minutes. Transfer the peppers to a bowl, cover with plastic wrap, and let steam for about 10 minutes. Peel off and discard the skin before using.
  • In a blender, mix green bell pepper, red bell pepper, jalapenos, serrano, onion, tomato, garlic, cilantro, diced tomato with juice, lime juice, salt, black pepper, and beer until smooth. Chill in the refrigerator for 30 minutes before serving.
