Decadent roasted pumpkin bread with chocolate chips enhanced by rich creme de cacao for extra moisture.
Ingredients:
  • 1 sugar pumpkin - seeded, peeled, and cut into cubes
  • 1 tablespoon olive oil
  • cooking spray
  • 0.5 cup sour cream
  • 0.33333334326744 cup creme de cacao liqueur
  • 0.25 cup butter, softened
  • 1.3333333730698 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 5 ounces chocolate chips
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) for a perfect start to your recipe.
  • Combine the pumpkin cubes, drizzle with olive oil, and sprinkle with 1 teaspoon of salt in a bowl. Spread the mixture evenly onto a baking sheet.
  • Roast pumpkin in a preheated oven at 375 degrees F (190 degrees C) for 30 minutes, then increase heat to 425 degrees F (220 degrees C) for an additional 30 minutes until the pumpkin is tender.
  • Chill pumpkin cubes until cold. Remove tough outer edges, keeping only the tender, mashable pumpkin. Measure out 2 cups of mashed pumpkin; save the rest for later use.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking dish with cooking spray.
  • In a bowl, combine 2 cups of pumpkin, sour cream, and creme de cacao, and mash together until smooth using a potato masher.
  • In a large bowl, use an electric mixer to whip up a fluffy mixture of butter and sugar. Add eggs one at a time, making sure each egg is fully incorporated before adding the next. Finally, mix in vanilla extract and pumpkin until well blended with the last egg.
  • Combine flour, pumpkin pie spice, baking soda, baking powder, and 1/4 teaspoon salt in a separate bowl. Add this mixture to the pumpkin batter. Gently fold in the chocolate chips and transfer the batter into the prepared baking dish.
  • Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
