Delicious roasted beets with aromatic herbs and zesty orange juice.
Ingredients:
  • 4 medium beets (about 1 lb), peeled, cut into 1-inch pieces
  • 1 small orange, halved, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 3 tablespoons butter
  • 1 tablespoon chopped fresh Italian (flat-leaf) parsley
  • 1 tablespoon chopped fresh rosemary leaves
  • 2 tablespoons orange juice
Instructions:
  • Preheat the oven to 400°F. Cut a 18x12-inch sheet of heavy-duty foil and coat it with cooking spray. In a large bowl, combine beets, orange slices, oil, salt, and pepper. Transfer the mixture to the center of the foil. Fold the foil over the mixture, sealing the edges tightly with a 1/2-inch fold, then fold again to allow heat circulation. Place the packet on a cookie sheet and bake.
  • Roast uncovered for an additional 10 minutes until the beets are tender and nicely browned.
  • Heat butter in a large skillet until melted. Whisk in parsley, rosemary, and orange juice, and cook until slightly thickened for 1 to 2 minutes. Add beets and oranges from the foil to the skillet, stirring until coated with the butter mixture.
