Roasted berry apples with meringue toppings

Indulge in a cozy berry pudding crowned with a sweet meringue topping.
Ingredients:
  • 5.00 gm cornflour
  • 2.50 gm ground cinnamon
  • 247.50 gm raspberry jam
  • 8 golden delicious apples, peeled, cored, cut into thick wedges
  • 1 vanilla bean, split
  • 250g fresh strawberries or frozen strawberries, hulled, halved
  • 8 egg whites
  • 430.00 gm caster sugar
Instructions:
  • Preheat your oven to 200C (180C fan-forced).
  • Whisk together cornflour and 2 tablespoons of water until smooth. Transfer to a small saucepan, add cinnamon and jam, then stir over medium heat until jam is melted. Bring to a boil and cook for 1 minute until slightly thickened. Remove from heat.
  • In a 5cm-deep, 22cm x 26cm roasting pan, combine apple and vanilla. Pour over the jam mixture and toss. Roast for 20 minutes, then stir in the strawberries. Bake for an additional 10 minutes until the apple is tender. Cover loosely with foil to keep warm before serving.
  • Preheat the grill to high. Using an electric mixer, whip egg whites until soft peaks form. Slowly add sugar, 1 tablespoon at a time, mixing well after each addition until sugar dissolves. Spread the meringue over the apple, using a spatula to create peaks evenly.
  • Grill until meringue is lightly golden on top. Serve.
