Soy sauce and sugar brine elevates the flavors of roasted Brussels sprouts, creating a crispy yet tender dish.
Ingredients:
  • 2 pounds Brussels sprouts
  • 2 quarts water
  • 0.5 cup kosher salt
  • 0.5 cup sugar
  • 0.25 cup Kikkoman Soy Sauce*
  • 3 tablespoons olive oil
  • 1 teaspoon black pepper
Instructions:
  • 1. Preheat oven to 400 degrees F. 2. Prepare Brussels sprouts by trimming stems and discarding wilted leaves; rinse under cold water. 3. In a large bowl, mix water, salt, sugar, and soy sauce until sugar and salt dissolve completely. 4. Submerge Brussels sprouts in the brine mixture. 5. Let Brussels sprouts brine for 1 hour.
  • Do not rinse the Brussels sprouts; instead, drain them. Combine them with olive oil and black pepper. Bake in an uncovered dish for 35 to 40 minutes until crispy outside and tender inside, or until preferred doneness is reached.
