Roasted Brussels sprouts and bacon paired with sweet pears and balsamic reduction for a tasty side dish.
Ingredients:
  • salt to taste
  • 1 pound Brussels sprouts, cut in half
  • 2 Anjou pears, cubed
  • 3 tablespoons olive oil, divided
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 slice bacon, cut into small pieces, or more to taste
  • 0.25 cup balsamic vinegar
Instructions:
  • Preheat your oven to 425°F (220°C) and lightly grease a baking pan.
  • Toss Brussels sprouts and pears in a bowl with 2 tablespoons of luscious olive oil, diced onion, garlic powder, and a pinch of salt until well coated. Transfer the flavorful mixture to the prepared pan.
  • Bake in the preheated oven for 25-30 minutes until golden brown and tender, remembering to toss halfway through for even browning.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until perfectly browned for about 10 minutes. Place the cooked bacon slices on paper towels to drain.
  • Remove the bacon grease from the skillet and add the rest of the olive oil and balsamic vinegar. Cook over low heat, stirring constantly, until it slightly thickens, about 3 to 4 minutes. Drizzle over the roasted mixture and enjoy.
