Ingredients:
  • 6 x 1.5cm-thick slices Italian-style bread
  • Olive oil spray
  • 1 garlic clove, halved
  • 75g goat's cheese
  • 130g bought roasted capsicum, patted dry with paper towel to remove excess oil, thinly sliced
  • 125.00 ml fresh basil leaves, shredded
  • 2 tsp balsamic vinegar
  • Salt & freshly ground pepper
Instructions:
  • Preheat grill to medium-high. Brush bread with olive oil spray on both sides and toast until golden brown. Rub with garlic on both sides.
  • Spread a generous amount of goat's cheese on each slice of bread. Combine capsicum, basil, and vinegar, then season with salt and pepper to taste.
  • Spread the capsicum mixture over the bread and enjoy right away.
