Quick and flavorful roasted caramelized veggies make the perfect speedy side dish for any hearty meal.
Ingredients:
  • 6 medium red capsicum
  • 6 medium green capsicum
  • 18.20 gm olive oil
Instructions:
  • Cut each capsicum in half and remove seeds and membrane. Slice each half into 4 lengthwise pieces. Arrange on trays, drizzle with oil, season with salt and pepper, then toss to coat. Roast for 30-35 minutes until browned and tender. Transfer to a bowl, cover with plastic wrap, and let sit for 10 minutes. Peel and discard skin and allow to cool completely.
