Ingredients:
  • 120g roasted red capsicum, thinly sliced
  • 82.50 ml finely grated parmesan cheese
  • 1 roma tomato, deseeded, finely chopped
  • 60g baby spinach, shredded
  • Baby spinach, to serve
  • Diced tomato, to serve
  • 99.00 gm self-raising flour
  • 128.75 gm milk
Instructions:
  • Create the basic batter by sifting flour into a bowl, making a well in the center. In a separate jug, whisk together milk and eggs, then pour the mixture into the flour. Whisk until smooth, then gently fold in capsicum, cheese, tomato, and spinach.
  • - Heat up a frying pan with 1 tablespoon of oil over medium heat. - Scoop up 1 heaped tablespoon of mixture for each fritter and cook 4 fritters for 3 minutes on each side until they are golden and cooked through. - Repeat the process to make a total of 16 fritters. - Serve the fritters with spinach and tomato.
