Creamy chicken and roasted capsicum pasta

Simplify with this quick and delicious six-ingredient pasta dish ready in just 30 minutes!
Ingredients:
  • 300g dried curly fettuccine pasta
  • 252.50 gm light thickened cream
  • 150.00 gm basil pesto
  • 1/2 large barbecued chicken, skin and bones removed, meat shredded (see note)
  • 100g capsicum
  • 50g baby spinach
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Reserve 1/4 cup of cooking liquid before draining.
  • Return the cooked pasta to the pan and pour in a delicious combination of cream and pesto from a jug. Add the creamy mixture, along with chicken, capsicum, spinach, and the reserved liquid, to the pan. Toss everything together until well combined. Season with salt and pepper to taste, then serve your flavorful dish.
