Elevate your sandwich game with a homemade brie and cherry tomato baguette.
Ingredients:
  • 2 Rustic Baguettes, split
  • 60ml olive oil
  • 200g brie, cut into thin wedges
  • 12 cherry tomatoes, halved
  • 20 pitted kalamata olives
  • 1 garlic clove, thinly sliced
  • 8 thyme sprigs
  • 20.00 ml finely grated parmesan
Instructions:
  • Preheat your oven to 200C and prepare two large baking trays by lining them with baking paper.
  • Lay baguettes open-faced on baking sheets. Drizzle with oil, then layer on brie, tomato, olives, garlic, thyme, and parmesan. Season to taste.
  • Bake for 10 minutes, swapping trays halfway through, until the brie is melted and the tomato just starts to collapse.
  • Arrange the baguette bases on a serving platter and cover them with the baguette tops before serving.
