Elevate your pasta game with garlic-infused roasted cherry tomatoes.
Ingredients:
  • 1 (10 ounce) basket cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • salt and ground black pepper to taste
  • 4 ounces angel hair pasta
  • 3 basil leaves, cut into thin strips, or more to taste
  • 1 dash red pepper flakes
  • 2 tablespoons fresh grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) for the perfect cooking temperature.
  • Mix together the tomatoes, olive oil, garlic, salt, and pepper in a bowl until fully combined, then evenly spread onto a shallow-sided baking sheet.
  • Roast in the oven until tomatoes are tender and wrinkled, about 25-30 minutes.
  • Bring a large pot of salted water to a vigorous boil. Cook angel hair pasta until al dente, about 4 to 5 minutes, stirring occasionally. Drain, saving a little cooking water.
  • Pour the tomatoes with juices into a saucepan along with basil and red pepper flakes. Adjust the consistency by adding some reserved cooking water. Warm the mixture over low heat for about 5 minutes, then mix in the pasta. Serve with a sprinkle of Parmesan cheese on top.
