Ultimate roast chicken recipe.
Ingredients:
  • 1.5kg chicken
  • 8 small onions
  • 36.40 gm extra virgin olive oil
  • 12 kalamata olives
  • 1 tsp cumin seeds
  • 3 garlic cloves
  • Zest and juice of 1 orange
  • Finely grated zest of 1 lemon
  • 57.20 gm honey
  • 20.00 ml roughly chopped mint leaves
  • 20.00 ml roughly chopped oregano leaves
Instructions:
  • Arrange the chicken pieces in a shallow glass or ceramic dish.
  • Create a flavorful marinade by crushing cumin seeds, garlic, orange zest, and lemon zest into a paste using a mortar and pestle.
  • Combine the honey, olive oil, mint, and oregano, then generously coat the chicken with the flavorful marinade, ensuring to massage most of the mixture underneath the skin gently with your fingers.
  • Marinate in the fridge for a minimum of 1 hour.
  • Preheat the oven to 220 degrees Celsius.
  • Place chicken in a large, lightly oiled ovenproof dish. Toss onions in extra virgin olive oil and scatter them with olives around the chicken.
  • Roast the chicken in the oven for 45-55 minutes, or until clear juices are released when a skewer is inserted between the thigh and leg.
