Elevate your pizza with homemade white sauce featuring roasted garlic and zesty lemon for a creamy, flavorful twist.
Ingredients:
  • 1 head garlic
  • 2 cups whole milk
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • A pinch cayenne, plus more to taste
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 cup Parmesan cheese, grated
  • 2 teaspoons lemon zest
Instructions:
  • Preheat the oven to 400°F. Trim the top off the garlic, place it on a piece of foil, drizzle with olive oil, seal the foil, and roast for about 40 minutes until caramelized and soft.
  • Mash roasted garlic: Once cooled, squeeze the cloves onto a cutting board. Use a chef’s knife to sweep back and forth, creating a smooth garlic paste, yielding approximately 1 tablespoon.
  • To infuse milk for the Mornay sauce, gently heat milk in a small saucepan over low heat. Stir in garlic paste until smooth. Let it simmer with the lid slightly ajar, then cover completely once simmering. Turn off the heat and keep warm to enhance the garlic flavor infusion.
  • Prepare the roux by melting butter in a medium saucepan over medium heat. Once the butter is foamy and melted, whisk in the flour and cook until it turns golden and fragrant, around 2 minutes.
  • Prepare the mornay sauce: Combine warm garlic-infused milk with butter-flour mixture, whisking until smooth with a few garlic bits remaining. Simmer and stir frequently until thick enough to coat the back of a spoon, about 3 minutes. Add cayenne, salt, Parmesan cheese, and lemon zest, whisking until fully incorporated. Adjust seasoning to taste before serving.
