Roasted-Garlic White Bean Hummus

Elevate your spread with unforgettable homemade hummus bursting with natural flavors.
Ingredients:
  • 1 bulb garlic, unpeeled
  • 2 teaspoons olive or vegetable oil
  • 1 can (15.5 ounces) great northern beans, drained and 2 tablespoons liquid reserved
  • 3 tablespoons lemon juice
  • Chopped fresh parsley
  • Pita bread wedges, crackers or raw vegetables, if desired
Instructions:
  • Preheat your oven to 350°F. Slice off the top 1/2-inch of a garlic bulb, drizzle with oil, wrap in foil, and bake for 50 to 60 minutes until soft. Let it cool slightly before using.
  • Press the garlic into the food processor. Combine beans, reserved bean liquid, lemon juice, and salt. Blend until smooth and uniform.
  • Transfer the dip into a serving dish, sprinkle with fresh parsley, and serve alongside pita bread wedges.
