Creamy golden beet hummus with chickpeas and white beans, ideal for snacking.
Ingredients:
  • 4 small golden beets, trimmed and peeled
  • 1 (15.5 ounce) can great northern beans, liquid drained and reserved
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon sea salt
  • 1 clove garlic, crushed
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet by lining it with aluminum foil.
  • Quarter vibrant beets and gently coat with luscious olive oil before transferring to the baking sheet.
  • Roast in the preheated oven for 35 to 40 minutes until the beet is tender when pierced with a knife. Allow it to cool slightly before serving.
  • Combine beets, beans, tahini, lemon juice, balsamic vinegar, cumin, turmeric, sea salt, and garlic in a food processor. Blend until smooth, adding bean liquid as needed for desired consistency. Transfer hummus to a serving bowl.
