Indulge in the caramelized flavors of roasted golden beets - perfect as a warm side dish or a refreshing addition to any salad.
Ingredients:
  • cooking spray
  • 1 pound golden beets
  • 2 tablespoons olive oil
  • 0.5 teaspoon dried sage
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground black pepper
  • 1 teaspoon grated lemon zest
Instructions:
  • Preheat oven to 400°F (200°C). Cover a sheet pan with foil and coat with cooking spray.
  • Prepare the beets by peeling and cutting them into 1 1/2-inch chunks. In a large bowl, toss the beets with olive oil, sage, thyme, salt, and pepper until they are evenly coated.
  • Arrange the beets in a single layer on the prepared sheet pan. Roast them, flipping halfway through, until tender and beginning to turn golden brown, for 35 to 40 minutes.
  • Take the beets out of the oven and return them to a bowl. Mix in the lemon zest.
