Delicious roasted leeks with Parmesan make a flavorful and easy side dish.
Ingredients:
  • 2 large leeks
  • 0.25 teaspoon salt
  • 0.13 teaspoon freshly ground black pepper
  • chopped parsley for garnish (optional)
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Prepare the leeks by cutting off the root end and dark green tops, then quarter them and thoroughly rinse to remove any sand. Gently pat dry with a paper towel.
  • Evenly coat the leeks with a drizzle of olive oil, salt, and pepper using your hands. Then, place the leeks cut side down in a baking dish.
  • Cook the leeks for 20 minutes until they are soft. Carefully turn them over so the cut side is facing up. Sprinkle grated Parmesan cheese over the leeks and continue cooking for an additional 10 minutes, allowing the cheese to melt. Optionally, garnish with chopped parsley before serving.
