Caramelized leeks with tangy lemon butter, perfect with roasted meats.
Ingredients:
  • 1 tablespoon freshly squeezed lemon juice
  • 0.25 teaspoon granulated garlic
  • 4 large leeks
  • 3 tablespoons olive oil
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) for a perfect cooking temperature.
  • Microwave butter in short intervals until melted. Mix in lemon juice and granulated garlic, then keep warm.
  • Prepare the leeks by trimming and discarding the dark green parts, saving for stock if desired. Trim the roots, leaving the end intact. Cut the leeks in half lengthwise, remove any tough outer layers, and rinse thoroughly between the layers to remove dirt.
  • In a large baking dish, nestle leeks, drizzle generously with olive oil, and season with salt and pepper, ensuring they are well-coated. Roast cut side down for 15 minutes, then flip to cut side up and roast for an additional 10 minutes. Drizzle with lemon butter and roast for 3 to 5 minutes longer.
