Upside-down leek tart recipe

Golden puff pastry filled with roasted leeks and crumbled feta, ready in just 10 minutes for a quick and delicious light meal or appetizer.
Ingredients:
  • 30g butter, melted
  • 5 leeks, trimmed, cut to 2cm lengths
  • 1 sheet frozen butter puff pastry, just thawed, trimmed to 22cm square
  • 60g creamy feta, crumbled
  • Thyme leaves, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Line a 19cm square cake pan with baking paper, leaving an overhang on two sides.
  • - Layer the base of the pan with butter, followed by a sprinkle of sugar. Position the leeks upright in the pan. Cover with foil and bake for 15 minutes until tender. Uncover and bake for an additional 25 minutes until most of the liquid is gone. Allow to cool for 10 minutes before serving.
  • Preheat the oven to 200C/180C fan forced. Place the pastry over the leeks and fold in the edges. Bake until golden brown, usually around 25-30 minutes. Allow it to cool until slightly warm, then transfer to a serving plate or board. Top with feta, thyme, and season to taste.
