Transform carrots into a delicious holiday side dish with just a few ingredients.
Ingredients:
  • 0.5 pound bacon
  • 3 pounds carrots, ends trimmed
  • 0.33 cup pecan-smoked pure maple syrup
  • 2 tablespoons pecan oil
  • 0.5 pound butter
  • 0.5 teaspoon cinnamon (such as Supreme Saigon®)
  • salt to taste
  • cayenne pepper to taste
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • In a large bowl, mix together maple syrup, pecan oil, melted butter, and cinnamon, and set it aside.
  • Halve the carrots lengthwise, then chop them into 4-inch long pieces.
  • Spread the carrots evenly in a baking dish and drizzle them with the delicious maple syrup mixture. Gently mix until each carrot is nicely coated. Cover the dish with foil to lock in the flavors.
  • Roast in the preheated oven until soft, for around 30 minutes.
  • In a large heavy skillet over medium-high heat, cook the bacon, turning occasionally, until it's evenly browned, about 10 minutes. Transfer the cooked bacon to a rimmed plate to drain and cool before chopping.
  • Take the carrots out of the oven, uncover, and generously top with crispy chopped bacon. Season with salt and a touch of cayenne pepper to enhance the flavors.
