Roasted pineapple & hot red pepper sauce

Ingredients:
  • 4 fresh red chillies
  • 4 red onions
  • 4 red peppers
  • 1 bulb of garlic
  • 1 very ripe pineapple
  • red wine vinegar
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Prepare the vegetables and fruit by deseeding the chillies, peeling and quartering the onions and peppers, and breaking apart the garlic bulb. Trim and peel the pineapple following its natural diagonal pattern, drizzle with olive oil, season with salt and pepper, then roast for 1 hour until soft and golden. Blend the roasted ingredients with red wine vinegar until smooth. Season to taste, refrigerate the mixture overnight, and carve chunks from the pineapple the next day after reheating for 30 minutes.
