Roasted pork leg with apple

Engage children with a simple and fun roast recipe.
Ingredients:
  • 2kg pork leg (bone intact)
  • 4.80 gm sea salt
  • 2 tsp fennel seeds
  • 4 medium carrots, peeled, cut diagonally into 3cm slices
  • 750g chat potatoes, halved
  • 2 red onions, halved, cut into wedges
  • 3 pink lady apples or fuji apples, quartered, cored, cut into thick wedges
  • 510.00 gm chicken style liquid stock
  • 187.50 gm dry white wine
  • 50.00 ml plain flour
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced. Place the pork in a large roasting pan, drizzle with oil, sprinkle with salt and fennel seeds, then season with pepper. Roast for 40 minutes or until the skin is golden and crackled.
  • Lower the oven temperature to 200°C/180°C fan-forced. Roast the pork for 30 minutes. Add carrot, potato, and onion to the pan with the pork and roast for another 30 minutes. Turn the vegetables, add the apple, and roast for an additional 15 minutes or until the pork juices run clear. Transfer everything to a serving dish.
  • Create a rich gravy by mixing stock and wine in a jug. Remove excess fat from the roasting pan, leaving 1 1/2 tablespoons of juices. Heat the pan over high heat, then add flour and cook for 1 to 2 minutes until golden and bubbling. Gradually pour in the stock mixture while stirring constantly. Let it cook and thicken for 8 to 10 minutes while scraping the pan for all the delicious flavors.
  • Serve the pork alongside a medley of fresh vegetables, sliced apple, and a generous drizzle of savory gravy.
