Roasted Pork Tenderloin with Vegetables

One-pan roasted pork tenderloin with veggies for a simple and delicious meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pork tenderloin (1 lb)
  • 2 teaspoons garlic-pepper blend
  • 2 medium baking or Yukon gold potatoes, peeled
  • 4 small zucchini (1 lb)
  • 1 1/2 cups frozen small whole onions (from 1-lb bag)
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
Instructions:
  • Preheat oven to 425°F. Coat pork with oil and season generously with garlic-pepper blend. Place pork in a 15x10x1-inch pan. Insert an ovenproof meat thermometer into the thickest part of the pork.
  • Halve the potatoes and zucchinis lengthwise. Arrange them along with the onions around the pork. Drizzle everything with butter, then sprinkle with thyme and salt before cooking.
  • Roast uncovered for 30-40 minutes until thermometer reads 160°F. Slice pork thinly and serve with vegetables.
