Roasted Portobello Mushrooms with Blue Cheese

Savory portobello mushrooms with tangy blue cheese. Perfect as a gourmet appetizer or piled high on a burger with crusty rolls, red onion, lettuce, and tomato.
Ingredients:
  • 2 portobello mushrooms, stems removed
  • 1 tablespoon soy sauce, or to taste
  • freshly ground black pepper
  • 3 tablespoons crumbled blue cheese
Instructions:
  • Preheat your oven or toaster oven to 425°F (220°C).
  • Arrange mushroom caps with gill side facing up on a baking sheet. Drizzle with soy sauce and sprinkle a touch of black pepper on each cap.
  • Bake for 25 minutes, then top each cap with 1 1/2 tablespoons of blue cheese. Bake for another 10 minutes until cheese is completely melted.
