Versatile side dish pairs perfectly with mac and cheese and Italian pasta. Leftovers enhance spaghetti sauce.
Ingredients:
  • 8 roma (plum) tomatoes, halved
  • 12 cloves garlic, peeled
  • 4 tablespoons olive oil
  • 0.25 cup chopped fresh basil leaves
  • salt and pepper to taste
Instructions:
  • Heat your oven up to a toasty 400 degrees F (200 degrees C).
  • Arrange the tomato halves snugly in a shallow baking dish. Tuck whole garlic cloves in between the tomatoes. Drizzle with olive oil, sprinkle with basil, and season with salt and pepper.
  • Roast in the oven for 35-45 minutes until the tomatoes are tender, sizzling, and slightly charred. Serve hot.
