Succulent Roma tomatoes roasted with fragrant herbs, garlic, and feta in extra-virgin olive oil for a vibrant summer flavor burst.
Ingredients:
  • 8 roma (plum) tomatoes, cut in half and seeds removed
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons chopped garlic
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • salt and black pepper to taste
  • 0.5 cup crumbled feta cheese
Instructions:
  • Heat up the oven to 375 degrees F (190 degrees C).
  • Combine tomatoes, olive oil, garlic, parsley, basil, oregano, salt, and pepper in a large bowl, ensuring the seasonings are evenly distributed in the tomatoes. Arrange tomatoes cut-side up on a baking sheet and top each with approximately 1 tablespoon of feta cheese.
  • Roast in the oven until the tomatoes are tender but still slightly firm, approximately 15 minutes.
