Caramelize Roma tomatoes and garlic for a rich, sweet twist to elevate your pasta dish.
Ingredients:
  • 1 pound roma (plum) tomatoes, halved and seeded
  • 2 cloves garlic, peeled
  • 1 pinch salt and freshly ground black pepper to taste
  • 10 leaves basil, torn
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet lined with parchment paper or aluminum foil.
  • Place the tomato halves skin-side down on the baking sheet, add garlic cloves, and generously drizzle with olive oil and sprinkle with salt and pepper for perfect seasoning.
  • Roast the tomatoes in the preheated oven until bubbling, around 25 minutes. Increase the heat to 425 degrees F (220 degrees C) and continue roasting until the tomatoes begin to brown, approximately 10 minutes. Turn off the oven and allow the tomatoes to caramelize further in the residual heat with the door closed for about 5 minutes.
  • Transfer the roasted tomatoes and garlic to a bowl. Mix in basil and use a wooden spoon to gently crush the mixture, keeping the tomatoes slightly chunky. Optionally, discard peels. Serve over your preferred cooked pasta.
