Create flavorful roasted tomato sauce effortlessly with personalized seasonings.
Ingredients:
  • 3kg ripe roma tomatoes, halved lengthways
  • 36.40 gm extra virgin olive oil
  • 5 garlic cloves, finely chopped
  • 3 fresh bay leaves
Instructions:
  • Preheat your oven to 150C/130C fan forced. Grease a large baking tray generously with oil. Arrange tomatoes cut side up on the tray. Season with salt, drizzle with oil, sprinkle with garlic, and add bay leaves. Roast for 1½ hours until tomatoes are collapsed and slightly golden. Let them cool slightly before serving.
  • Remove and discard the bay leaves and tomato skins. Transfer the tomatoes and juices to a food processor. Blend until smooth. Refrigerate for up to 1 week. Enjoy as pizza sauce or mix into pasta.
