Roasted-tomato sauce

Transform bland tomatoes into a sweet and flavorful roasted tomato sauce by slow-roasting to caramelize their natural sugars.
Ingredients:
  • 1kg vine-ripened tomatoes
  • 1 large onion, cut into wedges
  • 2 garlic cloves, sliced
  • 6 thyme sprigs
  • 40ml (2 tbsp) extra virgin olive oil
  • 40.00 ml chopped basil leaves
Instructions:
  • Preheat your oven to 170°C.
  • Cut each tomato in half horizontally and arrange them on a large baking tray along with the onion, garlic, and thyme.
  • Drizzle the tomatoes with olive oil and generously season with salt and pepper. Roast in the oven for 1 hour or until soft and caramelized. Let them cool slightly before serving.
  • Discard thyme leaves, then blend tomatoes, onion, and garlic until smooth.
  • Fold in the fragrant basil leaves and season to taste.
