Healthy roasted spaghetti squash with turkey sausage, sautéed onions, kale, and Parmesan.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • One 3-pound (1.4 kg) spaghetti squash
  • 3/4 pound (340 g) turkey sausage (or any favorite sausage), bulk or removed from casings
  • 1/2 cup minced red onion
  • 3 cloves garlic, minced
  • 1 to 2 cups thinly sliced kale
  • 1 cup (100 g) coarsely grated Parmesan cheese
  • 1 tablespoon finely chopped fresh oregano
  • Kosher or sea salt
Instructions:
  • Preheat your oven to 375°F (190°C). Grease the sheet pan with a tablespoon of oil or use a Silpat liner.
  • Prepare the spaghetti squash by cutting off the ends, halving it lengthwise, and removing the seeds and stringy bits. Place the squash halves cut-side down on an oiled or lined sheet pan and poke the tops with a sharp knife.
  • Baking: Roast at 375°F (190°C) for 35 to 45 minutes until the squash is tender. Allow it to cool, then scrape out the spaghetti-like strands with a fork into a bowl.
  • In a large sauté pan over medium heat, heat 2 tablespoons of olive oil. Sauté the onions until soft for 2 to 3 minutes, then add the garlic and cook for another minute. Toss in the sliced kale and cook for an additional minute or two.
  • Add the sausage to the pan and cook without stirring until it browns. Stir occasionally and continue cooking until the sausage bits are fully cooked, about 2 to 3 minutes.
  • Combine spaghetti squash strands with the sausage mixture, stirring until heated through, approximately 1 minute.
  • Finish with Flavor: Off the heat, sprinkle in the grated Parmesan cheese and oregano. Season with salt and pepper to your liking. Serve promptly.
