Elevate your meal with savory roasted squash topped with crispy panko for a perfect side dish for any meal!
Ingredients:
  • 1 butternut squash - peeled, seeded, and cubed
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup panko bread crumbs
  • 1 tablespoon ground thyme
  • 2 tablespoons butter, cubed and at room temperature
Instructions:
  • Preheat the oven to 375°F (190°C) for perfectly baked goodness.
  • Mix together the squash, olive oil, garlic, and a pinch of salt in a bowl until well combined. Transfer the mixture to a baking dish and cover it with aluminum foil.
  • Roast in the oven until the squash is tender, for 45 to 60 minutes, adjusting time based on cube size.
  • Mix panko with thyme, salt, pepper, and butter. Spread mixture evenly over squash. Bake until topping is golden brown, for an extra 10 to 15 minutes.
