Roasted strawberries with macaroons

Elevate strawberries and cream with a twist of balsamic vinegar and coconut macaroons.
Ingredients:
  • 500g (2 punnets) strawberries, hulled
  • 40.00 gm caster sugar
  • 80mls (1/3 cup) thin cream
  • 1 x 90g pkt coconut macaroons (Unibic brand)
  • 2 tsp balsamic vinegar (Cornwell's brand)
Instructions:
  • Preheat your oven to 200°C while combining strawberries and caster sugar in a bowl. Toss well to mix and let it rest for 10 minutes.
  • Prepare a baking tray lined with non-stick baking paper. Transfer the strawberries and any remaining liquid from the bowl onto the tray. Bake in a preheated oven for 15 minutes.
  • Whisk the cream using a hand whisk or electric beaters until soft peaks form.
  • Split the macaroons evenly among 4 serving bowls. Add the strawberries and any syrup on top. Finish with a generous drizzle of balsamic vinegar.
  • Gently swirl a spoonful of cream over the dish before presenting.
