Indulge in a creamy roasted sweet potato dip, perfect for dipping with tortillas, veggies, or spreading on crostini!
Ingredients:
  • 1 medium sweet potato
  • 0.25 cup chopped cilantro
  • 2 tablespoons fresh lime juice
  • 2 tablespoons tahini
  • 2 cloves garlic, pressed
  • 1 teaspoon ground cumin
  • 0.25 teaspoon red pepper flakes, or more to taste
  • 1 tablespoon chopped pistachios
Instructions:
  • Preheat your oven to a piping hot 400 degrees F (200 degrees C) and prepare a lined baking sheet with parchment paper or foil.
  • On a baking sheet, carefully poke the sweet potato all over with a fork to prevent it from bursting while baking.
  • Roast in the oven until the sweet potato is soft and cooked through, about 45 to 50 minutes. Allow to cool before serving.
  • Once the sweet potato has cooled, halve it and scoop out the flesh. Transfer the sweet potato flesh to a food processor or blender, then add cilantro, lime juice, tahini, garlic, cumin, salt, and red pepper flakes. Blend until smooth and well combined. Taste the mixture and adjust seasoning as needed.
  • Transfer dip into a bowl, sprinkle with chopped pistachios, and present.
