Roasted Sweet Potatoes with Sweet Miso-Scallion Butter

Oven-roasted sweet potato halves with miso-scallion butter.
Ingredients:
  • cooking spray
  • 2 sweet potatoes, halved lengthwise
  • 2 teaspoons olive oil
  • 2 tablespoons coconut oil
  • 0.25 cup diced sweet onion
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon white (shiro) miso
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 1 scallion, sliced
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) while lining a baking sheet with foil and spraying it with cooking spray for easy cleanup and crispy results.
  • Coat sweet potatoes in olive oil on cut sides and skins. Place cut side-down on baking sheet.
  • Cook in the oven until perfectly tender, approximately 35 minutes.
  • To make the miso-scallion butter, gently heat coconut oil in a small saucepan over medium heat. Sauté onion and ginger for 3 to 4 minutes. Take off heat, stir in miso, pressing it with a spoon to soften. Mix in soy sauce, brown sugar, and scallion.
  • Warm the mixture over low heat, stirring constantly, until the sugar completely melts and the mixture is warmed through, for about 3 minutes. Be careful not to let it boil.
  • Take the roasted sweet potatoes out of the oven, flip them over, and carefully slit the flesh. Drizzle miso butter over the top.
