Smashed Sweet Potatoes with Soy-Citrus Glaze

Roasted sweet potatoes smashed with a tangy soy-citrus glaze.
Ingredients:
  • 4 sweet potatoes
  • 1 tablespoon canola oil
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 0.25 cup packed brown sugar
  • 0.25 cup less-sodium soy sauce
  • 1 orange, zested and juiced
  • fresh chopped cilantro, for garnish
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and elegantly line a baking sheet with foil.
  • Peel sweet potatoes and slice into 3/4-inch-thick rounds.
  • Coat sweet potatoes with oil and gochugaru in a bowl. Arrange in a single layer on a foil-lined baking sheet.
  • Roast in the preheated oven until perfectly tender, for 15 to 18 minutes.
  • In a small saucepan over medium-high heat, combine brown sugar, soy sauce, orange juice, and orange zest. Bring to a boil, then reduce heat and simmer until a thick, syrupy glaze forms, about 15 minutes. Remove potatoes from the oven.
  • Place oven rack 6 inches below broiler and preheat. Gently press down on each potato slice using the bottom of a glass. Broil until golden in spots, around 3 minutes. Finish by drizzling with glaze and topping with fresh cilantro.
