Smushed Apples and Sweet Potatoes

Quick and healthy apple pie-inspired side dish recipe.
Ingredients:
  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons butter
  • 0.25 cup white sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 1 Granny Smith apple - peeled, cored and sliced
  • 0.125 cup milk
Instructions:
  • In a medium saucepan, gently submerge the sweet potato in water. Boil until tender, about 20 minutes. Drain and set aside.
  • In a small saucepan, slowly melt butter over gentle heat. Stir in sugar, cinnamon, and allspice. Toss in apple slices, cover, and simmer for 5 minutes until apples are soft. Combine apple mixture with drained sweet potatoes, add milk, and blend thoroughly with an electric mixer or fork until smooth.
