Chipotle Smashed Sweet Potatoes

Spicy chipotle sweet potato mash - a flavorful twist for Thanksgiving.
Ingredients:
  • 3 lb sweet potatoes, peeled, cubed
  • 1 teaspoon salt
  • 1/2 cup butter, cut into pieces
  • 1 to 2 tablespoons finely chopped chipotle peppers in adobo sauce (from 7-oz can)
  • 1/4 cup whipping cream
  • Salt to taste, if desired
Instructions:
  • Place sweet potatoes in a 4-quart Dutch oven and cover with water, adding 1 teaspoon of salt. Bring to a boil over high heat, then simmer on medium heat for 10 to 15 minutes until tender. Drain, saving 1/2 cup of the cooking water.
  • Add butter, chipotle peppers, and whipping cream to the pot with the potatoes. Mash everything together using a potato masher, gradually adding reserved water until the potatoes reach your preferred consistency. Season with salt to taste.
