Roasted sweet potatoes with caramelized onion, garlic, and balsamic vinegar.
Ingredients:
  • 4 cups chopped peeled sweet potato
  • 1 sweet onion, cut into wedges
  • 2 cloves garlic, sliced
  • 1 tablespoon balsamic vinegar, or more to taste
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Prepare all the ingredients.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Combine sweet potatoes, onion, and garlic in a bowl. Drizzle with olive oil, toss to coat well, and transfer to a shallow roasting pan.
  • Roast the sweet potato mixture in the preheated oven, tossing occasionally, until the vegetables are tender and golden brown, about 30 to 35 minutes.
  • Take the vegetables out of the oven and generously drizzle them with balsamic vinegar, then season with salt and pepper.
