Oven-Roasted Sweet Potatoes

Delicious oven-roasted sweet potatoes, perfect for sharing with loved ones.
Ingredients:
  • 4 large dark-orange sweet potatoes (3 pounds)
  • 1 tablespoon olive or vegetable oil
  • 2 tablespoons honey
  • 1/2 teaspoon dried rosemary leaves, crumbled
Instructions:
  • Preheat oven to 425°F. Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan with shortening. Peel sweet potatoes, slice into 3/4-inch pieces, and arrange in a single layer on the pan.
  • Combine the rest of the ingredients in a small microwave-safe bowl. Microwave on high for 20 to 30 seconds until hot. Stir the oil mixture and brush it over the potato slices.
  • Bake without a cover for 25-30 minutes, or until the potatoes are tender.
