Roasted sweet potatoes, onions, and apples with a hint of cinnamon and chipotle for a flavorful paleo-friendly treat.
Ingredients:
  • 1 tablespoon coconut oil, or more as needed
  • 3 sweet potatoes, cubed
  • 1 sweet onion, chopped
  • 1 sweet apple, chopped
  • 1 clove garlic, minced
  • 1 tablespoon ground cinnamon
  • 0.25 teaspoon ground chipotle pepper
  • salt to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Drizzle baking sheet with aromatic coconut oil, then layer with sweet potatoes, onion, apple, and garlic. Generously dust the colorful mixture with a blend of warm cinnamon, smoky chipotle pepper, and a touch of salt.
  • Roast the sweet potatoes in the preheated oven, stirring occasionally, until tender, for 20-30 minutes.
