Protein-packed salad with bold flavors perfect for lunch or dinner.
Ingredients:
  • 6 roma tomatoes, quartered
  • Sea salt & freshly ground pepper
  • 40g butter, melted
  • 1 garlic clove, crushed
  • 40.00 ml chopped fresh continental parsley
  • 20cm piece Turkish bread, halved horizontally, cut into 3cm squares
  • 2 x 185g cans tuna in chilli oil, drained, chillies removed, broken into chunks
  • 3 eggs, hard boiled, quartered
  • 1 Lebanese cucumber, chopped
  • 1 baby cos lettuce, leaves torn
  • 40.00 ml balsamic dressing
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. Arrange the tomato on the tray, drizzle with oil, and season. Bake for 25-30 minutes until golden. Allow to cool.
  • Combine the butter, garlic, and parsley to create a flavorful mixture. Toss the Turkish bread in the garlic butter mix and place it on a baking tray. Bake until golden, for 15-20 minutes.
  • Plate the tomatoes, tuna, eggs, cucumber, cos, and croutons on individual serving plates. Finish by generously drizzling the dressing on top before serving.
