Elevate roasted vegetables with zesty chili mayo.
Ingredients:
  • 2 red delight potatoes, peeled
  • 250g sweet potato (kumara), peeled
  • 1 carrot, peeled
  • 2 beetroot, peeled
  • 81.68 gm whole-egg mayonnaise
  • 20.80 gm chilli sauce
  • 1 tsp crushed garlic
  • 20.00 gm water
Instructions:
  • Preheat the oven to 220°C and line 2 baking trays with non-stick baking paper. Slice delight potatoes, sweet potatoes, carrots, and beetroot into 1.5cm-thick pieces, then arrange them on the trays. Give them a light spray of oil and bake for 45 minutes, or until they turn a lovely golden color. In a bowl, mix mayonnaise, chili sauce, garlic, and water. Serve alongside the roasted vegetables.
