Delicious roasted squash seeds make a nutritious snack from leftover squash.
Ingredients:
  • 1 cup butternut squash seeds or other hard squash seeds
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt, or to taste
Instructions:
  • Preheat the oven to a gentle 275 degrees F (135 degrees C) and line a baking sheet with parchment paper or aluminum foil.
  • Once the seeds are cleaned from the squash, give them a quick rinse, ensuring to eliminate any remaining strings and squash pieces. Gently dry the seeds, then combine them with olive oil and salt in a small bowl, making sure they are well-coated. Spread the seeds evenly on the baking sheet.
  • Place the mixture in the preheated oven for 15 minutes, or until the seeds begin to pop. Take out of the oven and allow to cool on the baking sheet before serving.
