Roasted Yam and Kale Salad

Delicious salad featuring sweet yams, caramelized onions, and kale - a flavor explosion loved by all!
Ingredients:
  • 2 jewel yams, cut into 1-inch cubes
  • salt and freshly ground black pepper to taste
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 bunch kale, torn into bite-sized pieces
  • 2 tablespoons red wine vinegar
  • 1 teaspoon chopped fresh thyme
Instructions:
  • Preheat the oven to a cozy 400 degrees F (200 degrees C). Give those yams a loving toss with 2 tablespoons of olive oil in a bowl. Season with a pinch of salt and a twist of pepper, then spread them out evenly on a baking sheet.
  • Bake the yams in the preheated oven until tender, for about 20-25 minutes. Let them cool in the refrigerator until they reach room temperature.
  • Heat the remaining olive oil in a large skillet until it shimmers. Sauté the onion and garlic until the onion caramelizes to a golden brown, about 15 minutes. Add the kale and cook until wilted and tender. Transfer the kale mixture to a bowl and cool in the refrigerator to room temperature.
  • Combine the cooled yams, kale, red wine vinegar, and fresh thyme in a bowl. Season with salt and pepper to taste, then gently mix everything together.
