Ingredients:
- 2 bunches rocket, washed, torn
- 200g mixed marinated olives
- 3 (about 180g) marinated artichokes, quartered
- 31.50 gm fresh lemon juice
- 13.80 gm olive oil
- 1 garlic clove, crushed
Instructions:
- Combine rocket, olives, and artichokes in a large bowl, tossing together.
- Combine lemon juice, oil, and garlic in a small jar with a screw-top lid. Season with salt and pepper, then shake vigorously until well mixed. Drizzle the dressing over the salad and gently toss until coated. Enjoy right away.
