Ingredients:

1/2 baby red cabbage, finely shredded
1/4 small green cabbage, finely shredded
2 small carrots, peeled, grated
80g baby rocket
40.00 ml chopped gherkins
123.75 gm whole-egg mayonnaise
42.00 gm lemon juice

Instructions:

Combine cabbages, carrot, onion, rocket, and gherkin in a large bowl.
In a small jug, mix mayonnaise and lemon juice. Season with salt and pepper. Drizzle the dressing over the salad, gently toss to combine, and serve.
