Try these flavorful chicken burgers with a side of crisp red cabbage slaw.
Ingredients:
  • 600g chicken mince
  • 70g (1 cup) fresh breadcrumbs
  • 1/4 red cabbage, finely shredded
  • 1/2 red onion, very thinly sliced
  • 1 carrot, peeled, coarsely grated
  • 62.50 ml finely chopped chives
  • 61.88 gm mayonnaise
  • 23.40 gm Dijon mustard
  • 14.40 gm honey
  • 18.20 gm olive oil
  • 1 loaf Turkish bread, quartered crossways, split
  • 100g baby rocket leaves
Instructions:
  • In a large bowl, mix together the chicken and breadcrumbs. Season with salt and pepper. Divide the mixture into four even portions and shape each into a 9cm patty. Place the patties on a plate, cover with plastic wrap, and refrigerate for 30 minutes.
  • In a large bowl, mix together cabbage, onion, carrot, chives, mayonnaise, mustard, and honey. Season with salt and pepper to taste.
  • Preheat the barbecue or chargrill until hot. Gently brush oil onto both the bread slices and chicken patties. Grill the chicken for about 3 minutes on each side until they turn golden brown and are fully cooked. Remove the chicken and then grill the bread for approximately 2 minutes until lightly toasted. Serve and enjoy!
  • Place the bread bases elegantly on serving plates, layer with the vibrant red cabbage slaw and succulent chicken patties, then add a handful of fresh rocket before finishing with the remaining bread. Serve promptly to enjoy at its best.
