Ingredients:
  • 8 (about 1kg) chicken drumsticks
  • 2 oranges, sliced
  • 16 large sage leaves
  • 4 garlic cloves, finely chopped
  • 3cm piece fresh ginger, peeled, finely shredded
  • Freshly ground pepper
  • Olive oil spray
  • 225g pkt Fresh coleslaw mix
  • 40g baby rocket, to serve
Instructions:
  • Preheat the oven to 200°C. Strip the skin off the chicken drumsticks and discard it.
  • Score each drumstick with two long diagonal cuts on the top.
  • Arrange the orange slices evenly on the bottom of a large baking dish, and tuck a sage leaf into each slit in the chicken drumsticks.
  • Lay the drumsticks over the orange slices and sage leaves. Scatter the garlic and ginger, grind pepper, and drizzle with olive oil. Roast for 30-35 minutes until golden and cooked.
  • Present the drumsticks alongside vibrant orange slices, creamy coleslaw, and fresh rocket leaves. Finish by elegantly drizzling with the flavorful pan juices before serving.
