Elevate your summer fruit salad by adding creamy goat cheese, smoky chicken, and spicy arugula for a delightful twist.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 30.00 ml white balsamic vinegar
  • 2 smoked chicken breast fillets, shredded
  • 80g baby rocket leaves
  • 50g (1/3 cup) slivered almonds, toasted
  • 800g rockmelon, peeled, seeded
  • 120g goats cheese, crumbled
Instructions:
  • Combine the oil and vinegar in a small bowl and whisk until fully incorporated.
  • Combine chicken, rocket, and almonds in a bowl. Season with salt and pepper, then drizzle half of the dressing over them. Gently toss to mix everything together.
  • Arrange thinly sliced rockmelon in individual serving dishes. Top with the chicken mixture and crumbled goat cheese. Finish by drizzling the remaining dressing over the top.
